Breakfast Cookies
So you don’t have time for breakfast? Grab one of these jumbo cookies and you will be good for a couple of hours or more and actually they are not all that bad health-wise.
Combine:
- 1/2 cup of raisins
- 1/2 cup shredded coconut
- 1/2 cup wheat flakes
- 1/2 cup quick oats
- 1 cup of flour
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
Cream together:
- 6 tablespoons brown sugar (packed)
- 6 tablespoons granulated sugar
- 6 tablespoons butter or margarine
Add and mix thoroughly:
- 1 egg
- 1/2 teaspoon vanilla
Add dry ingredients. Mix to form a stiff dough.
Place 1/3 cup dough on a lightly greased cookie sheet and flatten to about a 4 1/2 inch round.
Bake at 350 degrees for 10 or 12 minutes.
This makes 6 jumbo cookies but the recipe doubles nicely if you prefer more.
