Home Fried Potatoes
A little bit of a twist to an old favorite of mine.
Peel and Cube:
- 4 cups of potatoes
In a fairly large pot bring to a boil:
- 2 quarts of water
- 1 teaspoon salt
When water comes to a boil add potatoes. Bring back to a boil and drain potatoes.
In large frying pan heat:
- 2 tablespoons of vegetable oil
Saute until soft:
- 1/2 cup chopped onions( or up to two cups if you like onions)
- 2 tablespoons of minced garlic
Stir in:
- 1/4 teaspoon red pepper flakes
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
Add potatoes and continue to saute until potatoes are soft and lightly browned. If potatoes stick to the pan then add a little water.
