Lentil Vegetable Soup
A hearty comfort food packed with good things, including fibre which is a plus for those who are trying to lose weight.
Heat in a large pot:
- 1 tablespoon of oil
Add and cook until soft:
- 2 stalks of celery chopped
- 1 large onion chopped
- 3 carrots chopped
- 3 potatoes chopped
- 3 cloves garlic minced
- 3 bay leaves
Add:
- 8 cups of water
- 2 cups of lentils (check through for small rocks or other debris)
- 1/2 teaspoon sage, oregano, basil, marjoram, thyme
- 1 teaspoon sea salt
Cook on medium high heat for approx. 45 minutes.
Remove from heat and add of 3 tablespoons red wine vinegar. Ladle into bowls and serve.
