Microwave Walnut Penuche
The texture in this brown sugar candy is sooo silky and the toasted nuts make it addicting. If you really want to get fancy dip squares in a chocolate coating. You can find bars of chocolate coating in the baking aisles in grocery stores.
Line an 8 inch square pan with foil, letting the foil hang over the edges for two inches. Grease lightly.
On a microwave safe plate spread:
- 1 1/2 cups chopped walnuts
Microwave on high for 6 to 7 minutes stirring three times until lightly toasted.
In a bowl melt:
- 2/3 cup butter or margarine
Stir in:
- 1 cup packed light brown sugar
- 1 can sweetened condensed milk (not evaporated milk)
Microwave on high for 7 to 9 minutes until sugar is melted and mixture has thickened and is a medium caramel color.
Take from oven and add:
- 1 1/2 teaspoon of vanilla
Beat on slow speed until distributed evenly. Add nuts and blend in.
Pour into foil lined pan and refrigerate until firm. Remove from pan by lifting foil flaps. Remove foil. Cut into small squares.
